home in Manhattan on Easter weekend. Shown here with a breadbasket made with fresh dough,
Ziko shares his skills in the art of pastry making.
In 1989, Chef Ziko opened his own Italian restaurant, Roma Delight in Queens. After
5 successful years, he opened another restaurant in Manhattan. Chef Ziko sold his restaurants in 1996.
Since then he has taken up private catering.
A lot of his influences come from his home town in Egypt where the kids run barefoot
in the street and the milk is fresh from the cow. Bread is cooked in
adobe ovens and vegetables are smoked outdoors. The combination of these influences
has created a diverse style that is unparalleled in Mediterranean cooking.
